First Flush Estate, one of the Darjeeling supremos. When I buy these teas ( and I taste 100's every year) I look for (amongst other things) a very light yellow infusion, ever so slightly green. Then on the palate, gum leafyness, this is followed by a spoonfull of milk which is left over night to tell me how much oil and tannin is in the leaf. Looking at the hot, just brewed leaf I want a caramel look, slightly shiny colour, consistant, with good size leaf and little stalk.Thats enough I'm not giving away all my secrets.
