Simon Oaten
Beginning his trade in the late 2010s, Simon came to Adelaide after working as a supply chain manager of United Kingdom’s largest supermarket chain. Originally from London, UK, Simon grew up surrounded by a strong tea culture and developed a lifelong fascination with the ritual of brewing. His early interest in flavour profiles, steeping techniques, and origin stories laid the foundation for what would become a deeper passion.
After relocating to Australia, Simon became a partner in Kappy’s—one of the country's oldest independent coffee roasters. Immersed in the world of specialty coffee, he began to hone his craft, learning the intricacies of coffee roasting from bean to cup. From mastering roast profiles to understanding the chemistry behind caramelisation, acidity, and solubility, Simon brought the same curiosity and care he had for tea to the world of coffee.
Today, Simon is committed to sourcing ethically grown beans and developing roast curves that highlight the natural flavours of origin. Whether it's a delicate washed Ethiopian or a bold natural Brazilian, his approach to roasting is thoughtful, methodical, and driven by a deep respect for both the farmer and the final cup.
For Simon, coffee roasting is more than a trade—it’s a craft rooted in precision, patience, and storytelling through flavour.
